Think that coffee is only good for an early morning pick-me-up? Think again! Coffee’s full, smoky flavors can enhance a variety of recipes. A very sophisticated, strong ingredient, coffee best complements powerful foods, such as beef and lamb. It works great with other rich, smooth ingredients such as chocolate, nuts, and spices such as vanilla, cardamom, cloves and nutmeg. It also works well with acidic flavors such as orange and lemon. For something sultry and sweet, Coffee’s rich flavor can also add amazing contrast to sweet and creamy custards, ice creams, and light mousses.
Dark roasts, such as our Dark Roast Columbian or our TFM Dark Roast coffees, are the most full-bodied, and should be used in recipes when the coffee is used among other powerful flavors. Espresso packs the most concentrated flavor in very little liquid, so it's often used for baked goods. In cooking, coffee should always be treated as a spice. For the greatest flavor, grind the beans just before you use them. When brewed coffee is used as a flavoring, it should be at least twice as strong as coffee you would drink.
